- 1/2 cup chocolate chips
- 1/2 cup heavy cream, plus more for brushing
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400F (200C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, rolled oats, sugar, baking powder, and salt for your cherry chip oat scones.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Stir in the dried cherries and chocolate chips.
- In a small bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently bring it together. Pat it into a circle about 3/4 inch thick.
- Cut the circle into 8 wedges. Place the cherry chip oat scones on the prepared baking sheet.
- Brush the tops of the scones with a little extra heavy cream.
- Bake for 15-20 minutes, or until golden brown and cooked through.
- Let the cherry chip oat scones cool on a wire rack before serving.
