- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese

- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and spray a 9×13 inch baking dish with nonstick cooking spray.
- In a bowl, combine sliced zucchini and chopped onion with salt; let sit for 10 minutes to release moisture.
- In another bowl, whisk together eggs, garlic powder, and pepper. Stir in half of the mozzarella and cheddar cheese.
- Fold in the zucchini-onion mixture into the egg-cheese blend, then transfer to the prepared baking dish and smooth out evenly.
