Ingredients

  • 4 medium zucchinis (sliced thin)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3 large eggs
  • 1 cup seasoned breadcrumbs
  • 1 medium yellow onion (finely chopped)
  • 2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a bowl, combine sliced zucchini and chopped onion with salt; let sit for 10 minutes to release moisture.
  3. In another bowl, whisk together eggs, garlic powder, and pepper. Stir in half of the mozzarella and cheddar cheese.
