- 1 pound lean ground beef
- 2 (14.5-ounce) cans diced tomatoes (fire roasted preferred)
- 1 (15-ounce) drained can whole kernel corn
- 1 (15-ounce) drained and rinsed can kidney beans
- 1 (15-ounce) drained and rinsed can black beans
- 1 (4-ounce) drained can sliced olives
- 1 (1-ounce) package McCormick® taco seasoning
- 1 (14.5-ounce) can beef broth
- 1 (16-ounce) package cubed Velveeta cheese (or 2 cups shredded cheddar cheese)
Instructions
- In a large pot, heat the ground beef over medium-high heat. Cook and crumble the beef until it’s no longer pink. Drain any excess grease.
- Add the diced tomatoes, corn, kidney beans, black beans, and olives to the pot. Stir in the taco seasoning and beef broth, mixing thoroughly.
- Stir in Velveeta cheese (or shredded cheddar cheese) until it melts completely into the broth.
- Bring the soup to a boil. Reduce the heat and let it simmer for 5-10 minutes to allow the flavors to meld.
- Serve hot with your desired toppings like sour cream, shredded cheese, or cilantro.
