- 1 ½ lbs baby potatoes, halved
- 14 oz smoked sausage, sliced into rounds
- 1 tbsp olive oil
- 1 packet ranch seasoning mix
- 1 ½ cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, toss potatoes and sausage with olive oil and ranch seasoning until well coated.
- Spread the mixture into a greased 9×13-inch baking dish.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheeses evenly over the top, and return to oven for another 10–15 minutes, or until potatoes are tender and cheese is melted and bubbly.
- Broil for 2–3 minutes for extra golden cheese (optional).
- Garnish with fresh parsley and serve hot.
