- 1 pound smoked sausage (halal-certified, no beef), sliced into 1/2-inch rounds
- 4 cups baby potatoes, washed and halved or quartered
- 2 tablespoons olive oil
- 1 packet ranch seasoning mix (halal-certified)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream (optional, for serving)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Wash baby potatoes and cut into halves or quarters.
- In a large bowl, combine potatoes and sliced smoked sausage. Drizzle with olive oil. Sprinkle with ranch seasoning mix, garlic powder, onion powder, and black pepper. Toss to coat evenly.
- Spread the mixture in a single layer onto a large baking sheet. Roast for 25-30 minutes, until potatoes begin to soften and brown.
- Remove from oven, stir the mixture, and sprinkle evenly with shredded cheddar cheese.
- Return to the oven and bake for another 5-10 minutes, or until cheese is melted, bubbly, and lightly golden brown.
- Let rest for a minute or two. Garnish with fresh parsley and serve with sour cream on the side if desired.
