- 3 medium-sized potatoes, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon paprika
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1/4 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup salsa
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- Lime wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss diced potatoes with olive oil, salt, pepper, and paprika. Roast for 25-30 minutes, flipping halfway through for even crispiness.
- In a skillet, cook the ground beef or turkey over medium heat, breaking it up as it cooks. Stir in taco seasoning and water. Let simmer for 5 minutes.
- Once potatoes are crispy, divide them among serving bowls. Top with taco meat, shredded cheddar cheese, and return to the oven for 5-7 minutes to melt the cheese.
- Remove from the oven, then top with salsa, sour cream, diced red onion, cilantro, and a squeeze of lime juice. Serve warm!
