Description
This recipe takes juicy chicken breasts and turns them into something special—thinly sliced, stuffed with mozzarella and fresh pesto, then rolled up and baked to perfection.

- 4 thin chicken breasts (or 2 large sliced in half lengthwise)
- 1/2 cup basil pesto
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- 1 tbsp olive oil
- Optional: grated Parmesan for topping, toothpicks for securing
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Lay out chicken breasts and season lightly with salt and pepper.
- Spread each piece with pesto, then sprinkle with mozzarella.
- Roll up tightly and secure with toothpicks if needed.
- Place seam-side down in the baking dish, drizzle with olive oil, and sprinkle with Parmesan.
- Bake for 25–30 minutes until cooked through and golden.
- Let rest, then slice into pinwheels to serve.
