- 1 ½ cups mashed potatoes
- 1 cup shredded cheddar cheese
- ¼ cup grated parmesan cheese
- 2 large eggs
- 2 tablespoons chopped chives or green onions
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- non-stick spray or melted butter for greasing
Instructions
- Preheat your oven to 400°F (200°C) and grease a mini muffin tin with non-stick spray or melted butter.
- In a mixing bowl, combine mashed potatoes, cheddar cheese, parmesan, eggs, chives, garlic powder, salt, and pepper.
- Mix well until fully combined and the mixture is thick but scoopable.
- Spoon the mixture into the muffin tin, filling each cup to the top and lightly pressing down.
- Add a pinch of extra cheese on top of each puff if desired.
- Bake for 20 to 25 minutes until tops are golden and edges are crisp.
- Let cool slightly before removing from the tin. Serve warm with your favorite dip.
