- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In large pot, heat olive oil over medium heat. Sauté diced onion and garlic for 3–4 minutes until soft.
- Add ground beef, cook until browned and fully cooked. Drain excess grease.
- Stir in diced potatoes and chicken broth. Bring to boil, then simmer for 15–20 minutes until potatoes are tender.
- Pour in milk and heavy cream. Stir gently and heat through without boiling.
- Slowly add shredded cheddar cheese, stirring constantly until melted and smooth.
- Season with salt and pepper. Simmer briefly, then serve warm.
