- 1 lb boneless, skinless chicken breasts (about 3–4 pieces)
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1 large egg
- 2 tbsp olive oil
- 2 tsp dried Italian herbs (oregano and basil)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a loaf pan.
- Chop the chicken into small pieces and place in a bowl. Optionally, use a food processor for finer texture.
- Add minced garlic, grated parmesan, breadcrumbs, egg, salt, and pepper to the bowl. Mix until well combined.
- Shape the mixture into a loaf and place in the prepared loaf pan.
- In a separate bowl, whisk together olive oil and Italian herbs; drizzle over the loaf.
- Bake for 40-45 minutes until golden brown and cooked through.
