- 2 cups shredded cheese (cheddar and mozzarella combined)
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1/2 cup sour cream (for serving)
- 2 tbsp olive oil (for brushing)
Instructions
- Preheat a non-stick skillet over medium heat.
- Lay one flour tortilla flat on the cooking surface and brush one side lightly with olive oil.
- Sprinkle half of the tortilla with 1/2 cup of shredded cheese. Add a layer of diced green and red bell peppers over the cheese.
- Fold the tortilla in half, pressing gently to secure the filling. Place it in the preheated skillet and cook until golden brown (about 3-4 minutes). Flip carefully to cook the other side until crispy.
- Once cooked, use a sharp knife to cut out tree shapes from your quesadilla while warm.
- Serve hot with sour cream drizzled on top or on the side for dipping.
