Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 cups fresh bell peppers (mixed colors)
  • 1 large onion
  • 2 cups shredded cheese (sharp cheddar or Monterey Jack)
  • 1 packet taco seasoning
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup sour cream
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium-high heat, add oil and cook the boneless skinless chicken breasts until golden brown and cooked through, about six minutes per side. Let cool slightly before shredding into bite-sized pieces.
  3. In the same skillet, add chopped bell peppers and onions. Sauté until soft and fragrant, about five minutes.
  4. In a large bowl, combine shredded chicken, sautéed veggies, drained diced tomatoes, taco seasoning, sour cream, and just enough chicken broth to achieve a creamy consistency.
  5. Transfer half of the mixture into your prepared baking dish. Sprinkle half of the shredded cheese on top. Spoon in the remaining mixture and top with the rest of the cheese.
  6. Bake in preheated oven for about 25-30 minutes or until heated through and bubbly.
