Ingredients

  • 8 ounces rotini pasta
  • 2 cups fresh broccoli florets
  • 2 cups cooked chicken, shredded or diced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon minced garlic
  • Olive oil and seasonings (salt, pepper, Italian seasoning)

Instructions

  1. Cook rotini in salted boiling water until al dente. In the last 3 minutes, add broccoli florets. Drain and set aside.
  2. In a large bowl, mix cooked chicken with salt, pepper, garlic, Parmesan cheese, and Italian seasoning. Stir in the cooked pasta and broccoli.
  3. In a saucepan over medium heat, warm olive oil, then add heavy cream and bring to a simmer. Stir in mozzarella until melted.
  4. Combine the sauce with the chicken mixture and pour into a greased baking dish. Optionally top with breadcrumbs.
  5. Bake at 350°F (175°C) for 20-25 minutes or until golden brown.
