Description

Cheesy Cauliflower Bake with Bacon and Chives is a creamy low-carb side dish that combines cheese, bacon, and roasted cauliflower for a delicious alternative to mac and cheese.


Ingredients

  • 2 heads cauliflower, chopped into florets (about 10 cups)
  • 4 slices bacon, chopped
  • 2 tablespoons olive oil
  • ½ cup yellow onion, diced
  • 6 garlic cloves, minced
  • 2 cups almond milk or milk of choice
  • 4 tablespoons all-purpose flour or tapioca flour for gluten-free
  • 2 cups shredded cheddar cheese
  • 2 cups shredded parmesan cheese
  • 1 teaspoon salt
  • 4 tablespoons chives, chopped

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. Steam or boil cauliflower for 5–7 minutes until just fork-tender. Drain well.
  3. In a skillet, cook bacon over medium heat until crisp. Remove and set aside.
  4. In the same pan, add olive oil, sauté onion and garlic until soft.
  5. Stir in flour and cook for 1 minute. Slowly whisk in milk until smooth and thickened.
  6. Add cheddar and parmesan cheeses, stirring until melted and creamy. Season with salt.
  7. Mix in cauliflower, most of the bacon, and half the chives.
  8. Transfer mixture to the baking dish. Top with extra cheese and remaining bacon.
  9. Bake uncovered for 20–25 minutes until golden and bubbly.
  10. Sprinkle with remaining chives before serving.
