Cheesy Cauliflower Bake with Bacon and Chives is a creamy low-carb side dish that combines cheese, bacon, and roasted cauliflower for a delicious alternative to mac and cheese.

- 2 heads cauliflower, chopped into florets (about 10 cups)
- 4 slices bacon, chopped
- 2 tablespoons olive oil
- ½ cup yellow onion, diced
- 6 garlic cloves, minced
- 2 cups almond milk or milk of choice
- 4 tablespoons all-purpose flour or tapioca flour for gluten-free
- 2 cups shredded cheddar cheese
- 2 cups shredded parmesan cheese
- 1 teaspoon salt
- 4 tablespoons chives, chopped
Instructions
- Preheat oven to 375°F (190°C) and grease a large baking dish.
- Steam or boil cauliflower for 5–7 minutes until just fork-tender. Drain well.
- In a skillet, cook bacon over medium heat until crisp. Remove and set aside.
- In the same pan, add olive oil, sauté onion and garlic until soft.
- Stir in flour and cook for 1 minute. Slowly whisk in milk until smooth and thickened.
- Add cheddar and parmesan cheeses, stirring until melted and creamy. Season with salt.
- Mix in cauliflower, most of the bacon, and half the chives.
- Transfer mixture to the baking dish. Top with extra cheese and remaining bacon.
- Bake uncovered for 20–25 minutes until golden and bubbly.
- Sprinkle with remaining chives before serving.
