  • 8 large croissants
  • 10 eggs
  • 1 cup shredded cheddar cheese
  • 12 strips of bacon, cooked and chopped
  • 6 tablespoons green onion, finely sliced
  • 4 tablespoons milk
  • Salt and black pepper, to taste
  • Optional: red chili flakes or hot sauce for a kick

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Using a sharp knife, carefully slice the tops of the croissants and gently hollow out some of the insides to create space for the filling.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Stir in chopped bacon, green onion, and most of the shredded cheese (reserve a little for topping).
  5. Spoon the mixture evenly into the hollowed croissants.
  6. Sprinkle remaining cheese on top, and add a touch of chili flakes if using.
  7. Bake for 20–25 minutes, or until the egg is set and the croissants are golden and crisp.
  8. Serve hot, garnished with extra green onion or your favorite sauce.
