Instructions
- In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and bell pepper, cooking until softened, about 5 minutes. Stir in the minced garlic and sauté for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the thinly sliced sirloin steak to the skillet. Season with salt, pepper, and crushed red pepper flakes (if using). Cook for about 3-4 minutes, stirring frequently, until the steak is browned and cooked through.
- Reduce the heat to medium and pour in the heavy cream, stirring to combine. Gradually add the shredded provolone cheese, stirring continuously until melted and the sauce is smooth.
- Add the cooked tortellini to the skillet, tossing gently to coat in the creamy sauce. Cook for an additional 2 minutes to heat through. Remove from heat and garnish with fresh parsley before serving.
