4 Cheese Roasted Garlic Alfredo Stuffed Spaghetti Squash is a delicious and comforting low-carb dish that combines the rich flavors of four cheeses with roasted garlic, all stuffed into tender spaghetti squash.


Ingredients

  • 1 medium spaghetti squash
  • 1 cup Alfredo sauce
  • 1/2 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup cream cheese, softened
  • 4 cloves roasted garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  4. In a bowl, mix together the Alfredo sauce, ricotta cheese, mozzarella cheese, parmesan cheese, cream cheese, and roasted garlic.
  5. Once the squash is cooked, use a fork to scrape the flesh into strands.
  6. Combine the spaghetti squash strands with the cheese mixture and season with salt and pepper.
  7. Stuff the cheese mixture back into the squash halves.
  8. Bake for an additional 15-20 minutes until the cheese is bubbly and golden.
