- 1 medium spaghetti squash
- 1 cup Alfredo sauce
- 1/2 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1/2 cup cream cheese, softened
- 4 cloves roasted garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- In a bowl, mix together the Alfredo sauce, ricotta cheese, mozzarella cheese, parmesan cheese, cream cheese, and roasted garlic.
- Once the squash is cooked, use a fork to scrape the flesh into strands.
- Combine the spaghetti squash strands with the cheese mixture and season with salt and pepper.
- Stuff the cheese mixture back into the squash halves.
- Bake for an additional 15-20 minutes until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
