These homemade cheddar herb crackers are a delightful blend of cheese and fresh herbs, offering a crisp texture that’s perfect for snacking or serving with meals.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 cup shredded cheddar cheese
- 2 tablespoons finely chopped fresh herbs (such as rosemary, thyme, or parsley)
- 1/4 cup cold water
Instructions
- In a large mixing bowl, combine the flour, baking powder, and salt, whisking until well blended.
- Add the cubed chilled butter into the dry mixture, using your fingers or a pastry cutter to mix until it resembles coarse crumbs.
- Fold in the shredded cheddar cheese and the chopped fresh herbs until evenly distributed.
- Gradually pour in the cold water while mixing gently until the dough comes together, being careful not to overmix.
- Divide the dough into two equal portions, shaping each into a disk and wrapping them in plastic wrap. Chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Remove one disk from the refrigerator, and on a lightly floured surface, roll it out to about 1/8-inch thickness.
- Cut the rolled dough into your desired shapes using a sharp knife or cookie cutter.
- Carefully transfer the cut crackers to the prepared baking sheet, ensuring they are spaced about 1 inch apart.
- Bake the crackers for 12-15 minutes or until they turn golden brown and are crispy.
- After baking, let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
