Ingredients

  • 1 cup Brown sugar
  • 1/2 cup Unsalted butter
  • 2 large Eggs
  • 2 cups Plain flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Bicarb soda
  • 3 medium Overripe bananas
  • 1/2 cup Natural thick coconut yoghurt
  • 2 teaspoons Ground chai spice mix
  • 1 teaspoon Vanilla bean paste
  • 1 teaspoon Lemon zest
  • 1/2 cup Unsalted butter
  • 8 oz Cream cheese
  • 1 cup Pure icing sugar
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Chai spice mix

Instructions

  1. Preheat your oven to 200°C/180°C fan-forced. Grease a 23cm x 12cm x 8cm loaf pan and line with baking paper.
  2. Cream together brown sugar and softened butter in a stand mixer on medium speed for about 2 minutes until pale and creamy.
  3. Gradually add lightly beaten eggs in two stages, ensuring to mix well after each addition.
  4. Sift together plain flour, baking powder, and bicarb soda in a large bowl. Fold in the egg mixture until just combined, being careful not to overmix.
  5. Gently fold in mashed bananas, coconut yogurt, chai spice mix, vanilla bean paste, and lemon zest.
  6. Pour the batter into the prepared pan and bake for approximately 1 hour 20 minutes, or until a skewer comes out clean.
  7. Let the loaf cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
  8. To prepare the frosting, beat softened unsalted butter in a stand mixer until pale and fluffy. Add cream cheese, icing sugar, lemon zest, vanilla extract, and chai spice mix, mixing until smooth.
  9. Generously spread frosting over the cooled loaf and sprinkle with chai spice mix just before serving.
