- 1 cup Brown sugar
- 1/2 cup Unsalted butter
- 2 large Eggs
- 2 cups Plain flour
- 2 teaspoons Baking powder
- 1 teaspoon Bicarb soda
- 3 medium Overripe bananas
- 1/2 cup Natural thick coconut yoghurt
- 2 teaspoons Ground chai spice mix
- 1 teaspoon Vanilla bean paste
- 1 teaspoon Lemon zest
- 1/2 cup Unsalted butter
- 8 oz Cream cheese
- 1 cup Pure icing sugar
- 1 teaspoon Lemon zest
- 1 teaspoon Vanilla extract
- 1 teaspoon Chai spice mix
Instructions
- Preheat your oven to 200°C/180°C fan-forced. Grease a 23cm x 12cm x 8cm loaf pan and line with baking paper.
- Cream together brown sugar and softened butter in a stand mixer on medium speed for about 2 minutes until pale and creamy.
- Gradually add lightly beaten eggs in two stages, ensuring to mix well after each addition.
- Sift together plain flour, baking powder, and bicarb soda in a large bowl. Fold in the egg mixture until just combined, being careful not to overmix.
- Gently fold in mashed bananas, coconut yogurt, chai spice mix, vanilla bean paste, and lemon zest.
- Pour the batter into the prepared pan and bake for approximately 1 hour 20 minutes, or until a skewer comes out clean.
- Let the loaf cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
- To prepare the frosting, beat softened unsalted butter in a stand mixer until pale and fluffy. Add cream cheese, icing sugar, lemon zest, vanilla extract, and chai spice mix, mixing until smooth.
- Generously spread frosting over the cooled loaf and sprinkle with chai spice mix just before serving.
