Description

  • 2 cups (250 g) all-purpose flour
  • 1 tbsp ground cinnamon

  • 1/4 tsp ground cloves
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cups (275 g) light brown sugar
  • 4 egg yolks (room temperature)
  • 2 tsp vanilla
  • 1/2 tbsp heavy cream
  • 1/2 tbsp molasses
  • 6 tbsp (75 g) granulated white sugar (for spiced sugar)
  • 1/2 tsp ground cinnamon (for spiced sugar)
  • 1/4 tsp ground ginger (for spiced sugar)
  • 1/8 tsp ground allspice (for spiced sugar)
  • 1/8 tsp ground nutmeg (for spiced sugar)
  • 1/4 tsp ground cardamom (for spiced sugar)
  • Pinch of ground cloves (for spiced sugar)

Instructions

  1. Brown the butter: Melt the butter in a medium saucepan over medium heat. Let it simmer until it turns golden brown and gives off a nutty aroma (5-8 minutes). Remove from heat and allow it to cool completely.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, cinnamon, ginger, allspice, nutmeg, cardamom, cloves, baking powder, baking soda, and salt. Set aside.
  3. Mix the wet ingredients: In a large bowl, whip the cooled brown butter with an electric mixer on high speed for about 1 minute until fluffy. Add in the brown sugar and beat until combined and light in color (2 minutes).
  4. Add the egg yolks and vanilla: Add the egg yolks and vanilla to the butter-sugar mixture. Mix on medium speed for 1 minute until pale and fluffy. Scrape down the sides of the bowl as needed.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until well combined.
  6. Form the dough: Scoop out 22 portions of dough using a 2-tbsp cookie scoop, roll them into balls, and coat them in the spiced sugar mixture.
  7. Bake: Transfer the dough balls to a parchment-lined baking sheet, spacing them 2 inches apart. Bake at 350°F for 11-12 minutes, until the edges are golden but the center remains soft.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before serving.
