Delicious Cauliflower Fried Rice for a Guilt-Free Feast
Ingredients

- 1 bag Frozen Cauliflower
- 1 cup Frozen Peas
- 1 cup Carrots
- 1 medium Onion
- 2 cloves Minced Garlic
- 1 large Egg (optional for vegan)
- 2 tablespoons Soy Sauce
- 1 tablespoon Oyster Sauce (optional)
- to taste Salt
- to taste Pepper
Instructions
- Microwave frozen cauliflower for about 2 minutes to soften, then drain well.
- In a skillet, heat 1 tablespoon oil, add peas and carrots, and cook for 3-4 minutes.
- Add diced onion and sauté for 2 minutes until translucent.
- Push vegetables to the side, add oil, and scramble the egg for 1-2 minutes. Set aside.
- Return skillet to heat, add garlic and sauté for 30 seconds until fragrant.
- Add drained cauliflower rice, soy sauce, and oyster sauce. Cook for 3-4 minutes.
- Lower heat, add scrambled egg, and stir for 1 minute to combine.
