Delicious Cauliflower Fried Rice for a Guilt-Free Feast


Ingredients

  • 1 bag Frozen Cauliflower
  • 1 cup Frozen Peas
  • 1 cup Carrots
  • 1 medium Onion
  • 2 cloves Minced Garlic
  • 1 large Egg (optional for vegan)
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Oyster Sauce (optional)
  • to taste Salt
  • to taste Pepper

Instructions

  1. Microwave frozen cauliflower for about 2 minutes to soften, then drain well.
  2. In a skillet, heat 1 tablespoon oil, add peas and carrots, and cook for 3-4 minutes.
  3. Add diced onion and sauté for 2 minutes until translucent.
  4. Push vegetables to the side, add oil, and scramble the egg for 1-2 minutes. Set aside.
  5. Return skillet to heat, add garlic and sauté for 30 seconds until fragrant.
  6. Add drained cauliflower rice, soy sauce, and oyster sauce. Cook for 3-4 minutes.
  7. Lower heat, add scrambled egg, and stir for 1 minute to combine.
