A wholesome and comforting carrot and celery soup, perfect for healthy eating.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 3 sticks celery, finely diced
  • 5 medium carrots (280g / 10 oz), halved lengthwise and finely sliced
  • 4 cups (960ml) vegetable stock

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.
  2. Add celery and carrots, stir well and cook for 5-7 minutes.
  3. Pour in vegetable stock, season with salt and pepper, and simmer for 20-25 minutes until tender.
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Adjust seasoning if needed, then serve hot.
