Description
A wholesome and comforting carrot and celery soup, perfect for healthy eating.
Ingredients

- 1 tbsp olive oil
- 1 onion, finely diced
- 2 cloves garlic, minced
- 3 sticks celery, finely diced
- 5 medium carrots (280g / 10 oz), halved lengthwise and finely sliced
- 4 cups (960ml) vegetable stock
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.
- Add celery and carrots, stir well and cook for 5-7 minutes.
- Pour in vegetable stock, season with salt and pepper, and simmer for 20-25 minutes until tender.
- Blend the soup until smooth using an immersion blender or regular blender.
- Adjust seasoning if needed, then serve hot.
