Ingredients

  • 6 bone-in, skin-on chicken thighs (or drumsticks)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground allspice
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons vegetable oil (or coconut oil)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium tomato, chopped
  • 1 Scotch bonnet pepper (or substitute habanero for less heat), whole or minced
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • 1 teaspoon ground allspice
  • 1 teaspoon smoked paprika

Instructions

  1. Season chicken with salt, pepper, paprika, allspice, garlic powder, and onion powder.
  2. In a large pot, heat oil over medium heat and brown the chicken on all sides.
  3. Remove chicken and sauté onion, garlic, and bell peppers until soft.
  4. Add tomato, Scotch bonnet, thyme, allspice, and smoked paprika; stir well.
  5. Return chicken to pot, add rice, and enough water to cover; bring to a boil.
  6. Reduce heat, cover, and simmer until rice is cooked and chicken is tender.
  7. Let sit for a few minutes before serving.
