  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • 1 teaspoon sugar
  • 2 teaspoons balsamic vinegar
  • 2 oz (56 g) grated Montasio cheese (or Fontina or Gruyère)
  • 1 egg, lightly beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a floured surface, roll puff pastry to fit tart pan or form a rustic rectangle. Fold edges slightly for a border.
  3. Heat olive oil and butter in a skillet over medium heat.
  4. Add sliced onions and salt. Cook 25–30 minutes, stirring often, until golden and soft.
  5. Stir in thyme, sugar, and balsamic vinegar; cook 2–3 minutes more.
  6. Spread caramelized onions evenly over pastry.
  7. Sprinkle grated cheese on top.
  8. Brush edges with beaten egg for a golden crust.
  9. Bake 20–25 minutes until pastry is puffed, golden, and cheese is melted.
  10. Cool a few minutes before slicing.
