- 2 cups graham cracker crumbs
- 6 tablespoons butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 3 cups apples, peeled and sliced (such as Granny Smith or Honeycrisp)
- 2 tablespoons butter (for apples)
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 cup caramel sauce
Instructions
- Preheat oven to 325°F (163°C). Mix graham cracker crumbs with melted butter until fully combined.
- Press the mixture into the bottom of a 9-inch springform pan. Bake for 8–10 minutes until golden. Let cool.
- In a large bowl, beat the cream cheese until smooth. Add sugar and beat until incorporated.
- Add eggs one at a time, mixing on low speed. Stir in vanilla extract.
- Pour the cheesecake batter over the cooled crust and smooth the top.
- Place pan in a water bath and bake for 55–65 minutes or until edges are set but center jiggles slightly.
- Let cool at room temperature, then refrigerate for at least 4 hours or overnight.
- In a skillet, cook sliced apples with 2 tablespoons butter, brown sugar, and cinnamon until just tender.
- Cool the apple topping completely.
- Top chilled cheesecake with apples, then drizzle with caramel sauce before serving.
