- 0.25 cup powdered sugar
- 0.25 teaspoon cinnamon
- 0.5 cup mini chocolate chips

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well mixed.
- In a larger bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy. Then, beat in the egg and vanilla extract.
- Carefully add the dry ingredients to the wet ingredients, stirring just until combined.
- In another bowl, mix the ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips until the filling is well blended.
- Roll the cookie dough into 1-inch balls. Then, roll each ball in a mixture of granulated sugar and cinnamon.
- Place the rolled balls on your prepared baking sheet and flatten them slightly using the bottom of a glass.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
- After baking, let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, spread a teaspoon of the creamy ricotta filling on the flat side of one cookie and sandwich it with another to create delightful cookie sandwiches.
