  • 0.25 cup powdered sugar
  • 0.25 teaspoon cinnamon
  • 0.5 cup mini chocolate chips
  • 0.25 cup granulated sugar (for rolling)
  • 1.0 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well mixed.
  3. In a larger bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy. Then, beat in the egg and vanilla extract.
  4. Carefully add the dry ingredients to the wet ingredients, stirring just until combined.
  5. In another bowl, mix the ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips until the filling is well blended.
  6. Roll the cookie dough into 1-inch balls. Then, roll each ball in a mixture of granulated sugar and cinnamon.
  7. Place the rolled balls on your prepared baking sheet and flatten them slightly using the bottom of a glass.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
  9. After baking, let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, spread a teaspoon of the creamy ricotta filling on the flat side of one cookie and sandwich it with another to create delightful cookie sandwiches.
