- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Additional mini chocolate chips for garnish
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Combine Wet Ingredients: In another bowl, beat the softened butter, milk, eggs, and vanilla extract until well combined.
- Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
- Pour Batter: Divide the batter evenly between the prepared cake pans.
- Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Combine Filling Ingredients: In a medium bowl, mix the ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips until smooth and well combined.
- Whip Cream: In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Layer the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread half of the cannoli filling over the top.
- Add Second Layer: Place the second cake layer on top and spread the remaining cannoli filling over it.
- Frost the Cake: Use the whipped cream frosting to cover the top and sides of the cake, smoothing it out for a clean finish.
- Garnish: Sprinkle additional mini chocolate chips on top for decoration.
