Ingredients

Scale
  • For the Cake:
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Cannoli Filling:
  • 15 ounces ricotta cheese, drained
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ cup mini chocolate chips
  • For the Frosting:
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Additional mini chocolate chips for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Combine Wet Ingredients: In another bowl, beat the softened butter, milk, eggs, and vanilla extract until well combined.
  4. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
  5. Pour Batter: Divide the batter evenly between the prepared cake pans.
  6. Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. Combine Filling Ingredients: In a medium bowl, mix the ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips until smooth and well combined.
  9. Whip Cream: In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Layer the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread half of the cannoli filling over the top.
  11. Add Second Layer: Place the second cake layer on top and spread the remaining cannoli filling over it.
  12. Frost the Cake: Use the whipped cream frosting to cover the top and sides of the cake, smoothing it out for a clean finish.
  13. Garnish: Sprinkle additional mini chocolate chips on top for decoration.
