Instructions
- Start by preheating your oven to 375°F (190°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In a large bowl, using an electric mixer, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- Beat in the egg, vanilla extract, and peppermint extract until well combined.
- Gradually mix in the dry ingredients until just combined. The dough should be soft but not sticky.
- Divide the dough in half. Leave one half as it is, and add red food coloring to the other half. Mix until you achieve your desired shade of red.
- Wrap each portion of dough in plastic wrap and refrigerate for at least 1 hour to firm up.
- Once chilled, take a small piece of the white dough and a small piece of the red dough. Roll each piece into a long rope, about 6 inches long. Twist them together to form a candy cane shape.
- Place the shaped cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
- In a small bowl, whisk together powdered sugar and water until you achieve a smooth consistency.
- Once the cookies are completely cool, drizzle the icing over the cookies and sprinkle with crushed candy canes.
