Ingredients

  • 5 Tbsp. canola oil (divided)
  • 2 ribs celery (finely chopped)
  • 1/2 each green bell pepper (finely chopped)
  • 2 scallions (thinly sliced)
  • 2 cloves garlic (finely chopped)
  • 1/2 tsp. kosher salt
  • 1 large egg
  • 1/3 cup mayonnaise
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. fresh parsley (finely chopped)
  • 2 tsp. Cajun seasoning
  • 2 tsp. Worcestershire sauce
  • 1 tsp. lemon pepper seasoning
  • 1/2 tsp. black pepper (freshly ground)
  • 1 lb. jumbo lump crabmeat (picked through)
  • 1 cup crushed Saltine crackers
  • remoulade sauce (store-bought or homemade)
  • 10 brioche slider buns (toasted)
  • 2 Roma tomatoes (sliced)
  • 10 butter lettuce leaves

Instructions

  1. In a large skillet over medium heat, heat 1 Tbsp. oil and swirl to coat the pan. Add the celery, bell pepper, and scallions. Cook while stirring frequently until slightly softened, about 2 to 3 minutes. Stir in the garlic with salt and cook until fragrant, about 1 more minute. Transfer this mixture to a large bowl to cool slightly.
  2. In the bowl with the cooled veggie mixture, add the egg, mayonnaise, Dijon mustard, parsley, Cajun seasoning, Worcestershire sauce, lemon pepper seasoning, and black pepper. Whisk together until well combined. Gently fold in the crabmeat and crushed crackers using a spatula, ensuring you don’t break up the crab too much. Use a 1/4-cup measuring cup to portion the crab mixture into 10 patties.
  3. Wipe the skillet clean and return over medium heat. Add 2 Tbsp. of oil until shimmering. Carefully add 5 of the patties and cook, flipping halfway through, until both sides are deep golden brown, about 3 to 4 minutes. Transfer these to a plate, then repeat with the remaining oil and patties.
  4. Spread remoulade on the cut sides of the toasted brioche buns. Top each with a crab cake slider, a slice of fresh tomato, and a butter lettuce leaf. Close the sliders gently to serve and enjoy the flavor!
