These Cajun Chicken Sloppy Joes are a spicy, comforting twist on the classic sandwich—made with juicy ground chicken, bold Cajun seasoning, and a creamy tomato sauce.

- 1 lb ground chicken
- 1–2 tablespoons olive oil or oil + butter
- 1 small onion, finely chopped
- 1 rib celery, finely chopped (optional)
- ½–1 green bell pepper, finely chopped
- 3 tablespoons Cajun seasoning (or to taste)
- 3 cloves garlic, minced
- ½ cup crushed tomatoes or tomato sauce
- ½ tablespoon brown sugar
- ½–1 teaspoon hot sauce (optional)
- ½ cup heavy cream
- Salt to taste
- 4 burger rolls or buns, toasted
Instructions
- Heat oil (and butter if using) in a large skillet over medium-low heat until shimmering.
- Add onion, celery, and bell pepper. Cook for 7–8 minutes, stirring occasionally, until softened.
- Add ground chicken, breaking it up with a spatula. Cook until no longer pink.
- Sprinkle Cajun seasoning and garlic over the chicken. Stir for about 1 minute until fragrant.
- Stir in crushed tomatoes, brown sugar, hot sauce (if using), and heavy cream. Reduce heat and simmer for 15 minutes, stirring frequently.
- Taste and season with salt. Serve hot on toasted rolls.
