Description

This Butternut Squash Brussels Sprouts Salad is a vibrant and flavorful holiday side dish combining roasted butternut squash, crispy Brussels sprouts, and a tangy cranberry glaze. It is a nutritious and festive addition to any meal, perfect for Thanksgiving or any holiday gathering.

Ingredients

Scale
  • 1 small butternut squash (peeled and cubed)
  • 1 pound Brussels sprouts (trimmed and halved)
  • 1/2 cup dried cranberries
  • 1/4 cup pecans or walnuts (chopped)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For the cranberry glaze:
  • 1/2 cup fresh cranberries
  • 1/4 cup orange juice
  • 2 tablespoons maple syrup
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cube the butternut squash, and trim the Brussels sprouts, cutting them in half.
  2. Spread the butternut squash cubes and Brussels sprouts on a baking sheet. Drizzle them with olive oil, and season with salt and pepper.
  3. Roast for 25–30 minutes, or until tender and lightly browned, tossing halfway through.
  4. While the vegetables roast, make the cranberry glaze: In a saucepan, combine fresh cranberries, orange juice, maple syrup, balsamic vinegar, and Dijon mustard. Cook for about 10 minutes until the cranberries break down and the glaze thickens.
  5. Combine the roasted butternut squash and Brussels sprouts, dried cranberries, and chopped nuts in a large bowl.
  6. Drizzle the cranberry glaze over the top and toss gently to coat everything evenly. Serve warm or at room temperature.

Notes

  • Make ahead: Prepare the roasted vegetables and glaze ahead of time. Toss together just before serving.
  • Pairings: This salad complements turkey, ham, or roasted meats beautifully.
  • Flavor variations: Add a sprinkle of feta or goat cheese for extra richness or toss in fresh herbs like thyme or rosemary for a fragrant touch.
