  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional)

Instructions

  1. In a medium-sized bowl, mix the chicken pieces with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Let it marinate for at least 15 minutes.
  2. Heat 3 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium. Add 1 tablespoon of butter to the skillet. Scrape any browned bits from the pan and add minced garlic and diced onion. Sauté until the onion becomes soft and fragrant.
  4. Stir in tomato sauce and sugar. Simmer for 2-3 minutes before adding the chicken back into the skillet. Stir well, then pour in heavy cream and mix until the sauce turns a rich orange color.
  5. Add cayenne pepper, garam masala, curry powder, and black pepper. Simmer on low heat for 10 minutes to let the flavors meld together.
  6. Stir in the remaining 2 tablespoons of butter and let it melt into the sauce for a silky finish. Garnish with freshly chopped parsley if desired.
