Description

Butter Cauliflower is a vegetarian twist on the classic Butter Chicken, featuring rich and creamy flavors.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp chili powder (optional, for heat)
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup heavy cream or coconut cream (for vegan option)
  • 1 tbsp butter or plant-based butter
  • Salt to taste
  • Fresh cilantro, for garnish
  • Cooked basmati rice and plain yogurt, for serving

Instructions

  1. Preheat oven to 425°F (220°C). Toss cauliflower florets with 1 tbsp oil, salt, and a pinch of turmeric. Roast for 25–30 minutes until golden and tender.
  2. In a large skillet, heat remaining oil over medium heat. Sauté onion until soft. Add garlic and ginger, cook 1 minute.
  3. Stir in garam masala, cumin, turmeric, and chili powder. Cook until fragrant.
  4. Add crushed tomatoes and simmer for 10 minutes.
  5. Stir in cream and butter, then fold in the roasted cauliflower. Simmer 5 minutes to absorb flavor.
  6. Serve hot over rice with a dollop of yogurt and sprinkle of cilantro.
