Butter Cauliflower is a vegetarian twist on the classic Butter Chicken, featuring rich and creamy flavors.

- 1 large head cauliflower, cut into florets
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp garam masala
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp chili powder (optional, for heat)
- 1 can (14 oz) crushed tomatoes
- 1/2 cup heavy cream or coconut cream (for vegan option)
- 1 tbsp butter or plant-based butter
- Salt to taste
- Fresh cilantro, for garnish
- Cooked basmati rice and plain yogurt, for serving
Instructions
- Preheat oven to 425°F (220°C). Toss cauliflower florets with 1 tbsp oil, salt, and a pinch of turmeric. Roast for 25–30 minutes until golden and tender.
- In a large skillet, heat remaining oil over medium heat. Sauté onion until soft. Add garlic and ginger, cook 1 minute.
- Stir in garam masala, cumin, turmeric, and chili powder. Cook until fragrant.
- Add crushed tomatoes and simmer for 10 minutes.
- Stir in cream and butter, then fold in the roasted cauliflower. Simmer 5 minutes to absorb flavor.
- Serve hot over rice with a dollop of yogurt and sprinkle of cilantro.
