This Burrata Peach Summer Salad is a vibrant, elegant dish that captures the essence of summer with its creamy burrata, juicy peaches, and fresh basil.
Ingredients
- Burrata Cheese
- Ripe Peaches
- Cherry or Heirloom Tomatoes
- Fresh Basil
- Extra Virgin Olive Oil
- Balsamic Glaze (or good quality Balsamic Vinegar)
- Flaky Sea Salt
- Freshly Ground Black Pepper
- Arugula or Mixed Greens (Optional)
Instructions
- Wash your peaches thoroughly. If they have fuzzy skin, you can gently rub them with a paper towel. Slice them into wedges or thin half-moons, discarding the pit.
- Wash your cherry or grape tomatoes. If they are small, you can leave them whole, but I prefer to halve them for easier eating.
- Gently wash and pat dry your fresh basil leaves. You can leave them whole if they are small, or tear larger leaves into smaller pieces.
- If you’re using arugula or mixed greens, spread them out nicely on a large platter or individual plates.
- Artistically arrange the sliced peaches and halved tomatoes over your greens, or directly on your serving platter.
- Carefully place the burrata balls among the peaches and tomatoes.
- Gently tear or slice open the burrata balls just before serving.
- Scatter the fresh basil leaves over the entire salad.
- Drizzle generously with your good quality extra virgin olive oil.
- Next, drizzle with the balsamic glaze (or balsamic vinegar).
- Finally, sprinkle everything with flaky sea salt and freshly ground black pepper.
- This salad is at its absolute best when served fresh.
