  • 1 tablespoon Balsamic vinegar (optional)

Instructions

  1. Preheat your oven or grill.
  2. Slice the baguette or rustic bread into 1/2-inch thick slices.
  3. Brush both sides of the bread slices lightly with olive oil.
  4. Toast the bread slices until golden brown and crisp. This can be done in the oven, under the broiler, or on a grill.
  5. While the bread is toasting, prepare the tomato topping. Dice the ripe tomatoes into small pieces.
  6. Finely chop the fresh basil leaves.
  7. Mince or finely chop the garlic cloves.
  8. In a bowl, combine the diced tomatoes, chopped basil, minced garlic, and remaining olive oil.
  9. Season the tomato mixture with salt and black pepper to taste.
  10. If using, stir in the balsamic vinegar.
  11. Spoon the tomato mixture generously onto the toasted bread slices.
  12. Serve immediately as a delicious Italian appetizer.
