  • 1 tbsp olive oil

  • For the Bruschetta Topping:
  • 2 cups diced ripe tomatoes
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) or prepare your grill.
  2. Season the chicken breasts with salt and pepper.
  3. If baking, place chicken in a baking dish. If grilling, lightly oil the grill grates.
  4. Cook the chicken until it is fully cooked through and reaches an internal temperature of 165°F (74°C). Baking will take approximately 20-25 minutes, grilling will take about 6-8 minutes per side.
  5. While the chicken is cooking, prepare the bruschetta topping. In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, 2 tbsp olive oil, and balsamic glaze.
  6. Season the topping with salt and pepper to your preference.
  7. Once the chicken is cooked, remove it from the oven or grill.
  8. Spoon the bruschetta topping generously over each chicken breast.
  9. Serve your Bruschetta Chicken immediately.
