- 2 pounds chicken breasts
- 2 cups cherry tomatoes, halved
- 3 cloves fresh garlic, minced
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ¾ cup breadcrumbs
- ¼ cup fresh basil, chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 375°F. Grease a baking dish and lay the seasoned chicken breasts in a single layer. Drizzle with olive oil and bake for 20 minutes.
- In a bowl, combine halved cherry tomatoes, minced garlic, balsamic vinegar, olive oil, salt, pepper, and Italian seasoning. Let it marinate while the chicken bakes.
- Remove chicken from oven. Spoon the tomato mixture over the chicken. Top with mozzarella, Parmesan, and breadcrumbs.
- Return to oven and bake for another 15–20 minutes, until cheese is bubbly and topping is golden.
- Garnish with fresh chopped basil before serving.
