- 2 cups Powdered sugar
- 1 teaspoon Cinnamon

- 2 tablespoons Milk
Instructions
- Cream Together: In a stand mixer bowl, combine the unsalted butter, granulated sugar, and light brown sugar. Beat on medium-high speed for 2-3 minutes until fluffy and light.
- Mix Wet Ingredients: Add the eggs and vanilla extract to the butter mixture, beating for another 1-2 minutes until smooth and creamy.
- Combine Dry Ingredients: In a separate bowl, whisk together the cake flour, cornstarch, baking soda, baking powder, and kosher salt. Gradually add to the wet ingredients and mix on medium speed until combined.
- Chill the Dough: Cover the bowl with plastic wrap and chill the dough in the refrigerator for one hour.
- Prepare for Baking: Preheat your oven to 350°F and line two baking sheets with parchment paper.
- Make the Filling: In a medium bowl, mix the filling ingredients until smooth.
- Scoop and Shape: Use a heaping teaspoon to scoop the filling mixture and roll it into small balls.
- Assemble: Take 1/4 cup of cookie dough, create a well, place a filling ball inside, cover with dough, and roll into a ball.
- Bake: Place on baking sheets and bake for 11-13 minutes until set.
- Whisk the Icing: Mix icing ingredients together until smooth and spoon over the cookies.
- Set the Icing: Allow icing to set for about 15 minutes.
