  • 1 cup Light brown sugar (packed)
  • 1 teaspoon Cinnamon
  • 2 tablespoons Cake flour
  • 2 cups Powdered sugar
  • 1 teaspoon Cinnamon
  • 1 tablespoon Unsalted butter (softened)
  • 2 tablespoons Milk

Instructions

  1. Cream Together: In a stand mixer bowl, combine the unsalted butter, granulated sugar, and light brown sugar. Beat on medium-high speed for 2-3 minutes until fluffy and light.
  2. Mix Wet Ingredients: Add the eggs and vanilla extract to the butter mixture, beating for another 1-2 minutes until smooth and creamy.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the cake flour, cornstarch, baking soda, baking powder, and kosher salt. Gradually add to the wet ingredients and mix on medium speed until combined.
  4. Chill the Dough: Cover the bowl with plastic wrap and chill the dough in the refrigerator for one hour.
  5. Prepare for Baking: Preheat your oven to 350°F and line two baking sheets with parchment paper.
  6. Make the Filling: In a medium bowl, mix the filling ingredients until smooth.
  7. Scoop and Shape: Use a heaping teaspoon to scoop the filling mixture and roll it into small balls.
  8. Assemble: Take 1/4 cup of cookie dough, create a well, place a filling ball inside, cover with dough, and roll into a ball.
  9. Bake: Place on baking sheets and bake for 11-13 minutes until set.
  10. Whisk the Icing: Mix icing ingredients together until smooth and spoon over the cookies.
  11. Set the Icing: Allow icing to set for about 15 minutes.
