Description

Brown sugar cinnamon pop tart bars are a fun take on a childhood classic. A chewy vanilla cookie bar, stuffed with a brown sugar cinnamon filling, and topped with a cinnamon glaze.


Ingredients

  • 3/4 C salted butter (at room temperature)
  • 1 C white sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 2 & 1/4 C all purpose flour (spooned and leveled)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp salted butter (melted and cooled to room temperature)
  • 1 & 1/2 tsp cinnamon
  • 3/4 C brown sugar
  • 2 tbsp all purpose flour
  • 3/4 C powdered sugar (also called icing sugar)
  • 1/2 tsp cinnamon
  • 2 tbsp butter (melted and cooled to room temperature)
  • 2 tbsp milk

Instructions

  1. Preheat oven to 350 F and line an 8×8 square baking pan with parchment paper.
  2. In a large bowl, beat softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Add in egg and vanilla extract and mix until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet and mix until combined. Set aside.
  6. In a bowl, add brown sugar, butter, cinnamon, and flour.
  7. Mix until everything is combined; it will have the texture of wet sand. Set aside.
  8. Divide the cookie bar dough in half. Place half of the dough into the lined baking pan and press down to cover the bottom.
  9. Add the brown sugar filling on top and pat down evenly.
  10. Use the remaining cookie dough to cover the filling by breaking it into small pieces, flattening with your palms, and laying on top. Smooth with your hands.
  11. Bake for 25 minutes or until the edges turn light golden brown.
  12. Once cooled to room temperature, prepare the glaze.
  13. In a bowl, add powdered sugar, cinnamon, butter, and milk.
  14. Whisk together until smooth.
  15. Pour the glaze over the bars and smooth evenly.
  16. Let the bars sit until the glaze hardens.
