Description
Brown sugar cinnamon pop tart bars are a fun take on a childhood classic. A chewy vanilla cookie bar, stuffed with a brown sugar cinnamon filling, and topped with a cinnamon glaze.

- 3/4 C salted butter (at room temperature)
- 1 C white sugar
- 1 tsp vanilla extract
- 1 large egg
- 2 & 1/4 C all purpose flour (spooned and leveled)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 4 tbsp salted butter (melted and cooled to room temperature)
- 1 & 1/2 tsp cinnamon
- 3/4 C brown sugar
- 2 tbsp all purpose flour
- 3/4 C powdered sugar (also called icing sugar)
- 1/2 tsp cinnamon
- 2 tbsp butter (melted and cooled to room temperature)
- 2 tbsp milk
Instructions
- Preheat oven to 350 F and line an 8×8 square baking pan with parchment paper.
- In a large bowl, beat softened butter and sugar until light and fluffy, about 2-3 minutes.
- Add in egg and vanilla extract and mix until well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet and mix until combined. Set aside.
- In a bowl, add brown sugar, butter, cinnamon, and flour.
- Mix until everything is combined; it will have the texture of wet sand. Set aside.
- Divide the cookie bar dough in half. Place half of the dough into the lined baking pan and press down to cover the bottom.
- Add the brown sugar filling on top and pat down evenly.
- Use the remaining cookie dough to cover the filling by breaking it into small pieces, flattening with your palms, and laying on top. Smooth with your hands.
- Bake for 25 minutes or until the edges turn light golden brown.
- Once cooled to room temperature, prepare the glaze.
- In a bowl, add powdered sugar, cinnamon, butter, and milk.
- Whisk together until smooth.
- Pour the glaze over the bars and smooth evenly.
- Let the bars sit until the glaze hardens.

- Ensure butter is at room temperature for better mixing.
- Adjust cinnamon to your taste preference.
- Store leftovers in an airtight container.
