Ingredients

  • 3/4 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup salted butter (for browning)
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 units eggs (at room temperature)
  • 1 tsp vanilla bean paste or extract
  • 1 can pumpkin puree (15 oz)
  • 1/4 cup milk of choice (at room temperature)
  • 1/2 cup all-purpose flour
  • 3 tbsp brown sugar (light or dark)
  • 3 tbsp granulated sugar
  • 1 tsp cinnamon
  • 6 tbsp salted butter (at room temperature)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. Brown the butter in a saucepan over medium-high heat until golden and fragrant.
  3. Prepare the streusel topping by mixing flour, brown sugar, granulated sugar, cinnamon, and butter until crumbly.
  4. Whisk together the dry ingredients in a separate bowl.
  5. Combine the browned butter with sugars, add eggs and vanilla, then mix until smooth.
  6. Mix in pumpkin puree and milk until smooth.
  7. Fold dry ingredients into the wet mixture gently.
  8. Pour the batter into the pan and sprinkle streusel topping on top.
  9. Bake for 70-80 minutes until a toothpick comes out clean.
  10. Cool in the pan, then completely before slicing.
