Description
Brookies are a rich fusion of fudgy brownies and crunchy cookies.
Ingredients

- 250 g of 70% dark chocolate
- 150 g of butter (for brownie layer)
- 180 g of sugar
- 4 eggs
- 150 g of flour (for brownie layer)
- A pinch of fleur de sel
- 125 g of butter (for cookie layer)
- 80 g of vergeoise sugar
- 40 g of white sugar
- 1 egg (for cookie layer)
- 170 g of flour (for cookie layer)
- 1 teaspoon baking powder
- 150 g of chopped chocolate (or chocolate chunks)
Instructions
- Preheat oven to 175 °C (fan-assisted if possible). Grease and line a 20×20 cm baking pan.
- Brownie layer: Melt butter and dark chocolate together, stirring frequently. Once smooth, mix in sugar, then add eggs in two additions. Sift in flour and fleur de sel, and stir gently. Pour into prepared pan and refrigerate.
- Cookie layer: Cream butter with both sugars until light and fluffy. Add egg, mix well, then stir in flour and baking powder. Fold in chopped chocolate. Chill dough for 30 minutes.
- Remove pan from fridge and crumble or press cookie dough evenly over brownie batter.
- Bake for 20–25 minutes until the cookie top is golden and a toothpick comes out with moist crumbs.
- Let cool completely before slicing into squares.
