Ingredients

  • Fresh broccoli florets: 4 cups
  • Red onion, diced: ½ cup
  • Dried cranberries: ½ cup
  • Sunflower seeds: ⅓ cup
  • Crisp apple, diced: 1 medium
  • Cooked bacon, crumbled: ½ cup
  • Shredded cheddar cheese: ½ cup
  • Mayonnaise: ½ cup
  • Greek yogurt: ¼ cup
  • Honey: 2 tbsp
  • Apple cider vinegar: 2 tbsp
  • Salt: To taste
  • Black pepper: To taste

Instructions

  1. Rinse the broccoli under cold water and cut it into small bite sized florets.
  2. Dice the red onion finely and chop the apple into small cubes without removing the skin for extra fiber.
  3. In a large mixing bowl add broccoli, red onion, apple cubes, cranberries, sunflower seeds, bacon, and shredded cheese.
  4. In a separate smaller bowl whisk together mayonnaise, Greek yogurt, honey, apple cider vinegar, salt, and pepper until creamy.
  5. Pour the dressing over the broccoli mixture.
  6. Gently toss until everything is coated evenly with the dressing.
  7. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to blend.
  8. Before serving, give the salad a light toss to refresh its texture.

Notes

  • For a lighter version, replace all of the mayonnaise with Greek yogurt.
  • Add raisins or diced pears for extra sweetness.
  • Increase the amount of bacon or add toasted almonds for a savory touch.
  • For a vegetarian version, leave out the bacon and add roasted chickpeas for crunch.
