- 4 boneless, skinless chicken breasts
- 1 cup fresh broccoli florets (steamed and chopped)
- 1 cup shredded cheddar cheese (sharp or mild)
- 1/4 cup cream cheese (softened)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 teaspoon paprika (for seasoning)
- 1/4 cup breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Steam the broccoli florets until tender (about 3-4 minutes), then chop them finely.
- In a bowl, combine the chopped broccoli, shredded cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Carefully slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Season both sides of the chicken breasts with salt, pepper, and paprika.
- Spoon the broccoli and cheese mixture into each chicken breast pocket, dividing it evenly among the breasts. Use toothpicks to secure the openings if necessary.
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Add the stuffed chicken breasts to the skillet and sear for about 3-4 minutes on each side until golden brown.
- If using a skillet, transfer it to the preheated oven. If not, place the seared chicken breasts in a baking dish. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).
- If desired, sprinkle breadcrumbs on top of the chicken during the last 5 minutes of baking for a crunchy topping.
- Let the chicken rest for a few minutes before slicing. Serve warm, garnished with additional cheese or herbs if desired.
