- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups milk
- 2 cups chicken or vegetable broth
- 4 cups broccoli florets, chopped
- 1 cup carrots, shredded
- 2 cups sharp cheddar cheese, shredded
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat. Add chopped onion and sauté until soft, about 4 minutes.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over the onion mixture, stir well, and cook for 1 to 2 minutes.
- Slowly whisk in the milk and then the broth, stirring constantly until smooth.
- Bring to a simmer and add broccoli and carrots. Cook for about 15 minutes until vegetables are tender.
- Lower the heat and stir in cheddar cheese gradually until melted and smooth.
- Season with salt and pepper. For a smoother texture, blend partially with an immersion blender if desired.
