- 2 tablespoons butter
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2½ cups low-sodium chicken broth
- 1½ cups whole milk
- 2 cups sharp cheddar cheese, freshly grated
- ½ cup heavy cream
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ¼ teaspoon nutmeg
- ½ teaspoon paprika
- Extra shredded cheddar cheese
- Fresh chives or green onions
- Crispy bacon bits
- Crusty bread for dipping
Instructions
- Prepare the broccoli by cutting it into bite-sized florets.
- Melt butter in a large pot over medium heat. Add diced onion and cook until translucent.
- Add minced garlic and stir for 30 seconds. Sprinkle flour and whisk for 2 minutes.
- Slowly pour in chicken broth while whisking. Add milk and bring to a gentle simmer.
- Add broccoli florets and cook for 8-10 minutes until tender.
- Remove from heat and gradually stir in grated cheddar cheese until melted.
- Pour in heavy cream and season with salt, pepper, nutmeg, and paprika. Adjust seasonings as needed.
