Description
This Broccoli Cheddar Chicken Gnocchi Bake is creamy, cheesy, and comforting—an easy baked gnocchi casserole perfect for cozy dinners.

- 2 Tbsps unsalted butter
- 1 Tbsp Extra virgin olive oil
- 2 (16 oz) packages potato gnocchi, homemade or store-bought
- 1 head organic broccoli, chopped into florets (3–4 cups)
- 2 cups cooked shredded chicken
- 4 garlic cloves, minced
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 Tbsps organic all-purpose flour
- 3 cups organic chicken stock
- 1 1/2 cups organic heavy cream
- 2–3 cups sharp cheddar, shredded or grated
- 1 cup sharp cheddar, shredded or grated
Instructions
- In a medium-sized skillet over medium-high heat, add the olive oil. Once heated, add the broccoli florets, tossing them until they become slightly tender, about 3-4 minutes. Remove from heat and let cool.
- Preheat the oven to 375 degrees Fahrenheit and prepare a standard 9×13 baking dish. Note: If it’s not non-stick, be sure to coat it with oil or butter.
- In the medium deep skillet over medium-high heat, add the butter until melted. Add in the minced garlic and sauté until fragrant, about 1 minute.
- Add in the seasonings: salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, oregano, basil, and parsley and stir until combined. Add in the flour and whisk until combined.
- Reduce the heat to medium-low and slowly add in the heavy cream and chicken stock, whisking until combined and the sauce begins to thicken a bit from the flour. Let it slightly bubble for 1-2 minutes and then add in the grated or shredded sharp cheddar, whisking again until fully melted and sauce thickens, about 2-3 minutes.
- Add in the uncooked gnocchi, shredded chicken, and sautéed broccoli, stirring everything together until they are fully coated. After about 1-2 minutes, remove from heat.
- Carefully transfer the broccoli cheddar mixture into the prepared baking dish and sprinkle the remaining sharp cheddar cheese atop everything until fully covered.
- Bake (without being covered) for 15-20 minutes or so, or until cheese has fully melted, the top is browned or golden slightly, and the sauce is bubbly at the sides.
- Remove from oven and serve with your favorite salad or bread.
