Description

This Broccoli Cheddar Chicken Gnocchi Bake is creamy, cheesy, and comforting—an easy baked gnocchi casserole perfect for cozy dinners.


Ingredients

  • 2 Tbsps unsalted butter
  • 1 Tbsp Extra virgin olive oil
  • 2 (16 oz) packages potato gnocchi, homemade or store-bought
  • 1 head organic broccoli, chopped into florets (34 cups)
  • 2 cups cooked shredded chicken
  • 4 garlic cloves, minced
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 Tbsps organic all-purpose flour
  • 3 cups organic chicken stock
  • 1 1/2 cups organic heavy cream
  • 23 cups sharp cheddar, shredded or grated
  • 1 cup sharp cheddar, shredded or grated

Instructions

  1. In a medium-sized skillet over medium-high heat, add the olive oil. Once heated, add the broccoli florets, tossing them until they become slightly tender, about 3-4 minutes. Remove from heat and let cool.
  2. Preheat the oven to 375 degrees Fahrenheit and prepare a standard 9×13 baking dish. Note: If it’s not non-stick, be sure to coat it with oil or butter.
  3. In the medium deep skillet over medium-high heat, add the butter until melted. Add in the minced garlic and sauté until fragrant, about 1 minute.
  4. Add in the seasonings: salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, oregano, basil, and parsley and stir until combined. Add in the flour and whisk until combined.
  5. Reduce the heat to medium-low and slowly add in the heavy cream and chicken stock, whisking until combined and the sauce begins to thicken a bit from the flour. Let it slightly bubble for 1-2 minutes and then add in the grated or shredded sharp cheddar, whisking again until fully melted and sauce thickens, about 2-3 minutes.
  6. Add in the uncooked gnocchi, shredded chicken, and sautéed broccoli, stirring everything together until they are fully coated. After about 1-2 minutes, remove from heat.
  7. Carefully transfer the broccoli cheddar mixture into the prepared baking dish and sprinkle the remaining sharp cheddar cheese atop everything until fully covered.
  8. Bake (without being covered) for 15-20 minutes or so, or until cheese has fully melted, the top is browned or golden slightly, and the sauce is bubbly at the sides.
  9. Remove from oven and serve with your favorite salad or bread.
