- 6 large eggs
- ½ pound ground breakfast sausage (or turkey sausage)
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 10 small flour tortillas
- Nonstick cooking spray or oil spray
- Diced bell peppers
- Sautéed onions or spinach
- Salsa or hot sauce
Instructions
- In a skillet over medium heat, cook the sausage until browned. Drain excess grease and set aside.
- Whisk eggs with salt and pepper. Cook over medium-low heat until softly scrambled, then remove from heat.
- In a bowl, mix scrambled eggs, sausage, and shredded cheese.
- Add 2–3 tablespoons of filling to each tortilla and roll tightly. Place seam-side down on a lined baking sheet.
- Spray tops with cooking spray. Bake at 425°F (220°C) for 15–20 minutes until crispy. To freeze, freeze on the sheet 1 hour, then transfer to a bag.
- Pair with salsa, sour cream, or hot sauce and enjoy warm.
