Description

Ingredients

  • ½ pound ground breakfast sausage (or turkey sausage)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 10 small flour tortillas
  • Nonstick cooking spray or oil spray
  • Diced bell peppers
  • Sautéed onions or spinach
  • Salsa or hot sauce

Instructions

  1. In a skillet over medium heat, cook the sausage until browned. Drain excess grease and set aside.
  2. Whisk eggs with salt and pepper. Cook over medium-low heat until softly scrambled, then remove from heat.
  3. In a bowl, mix scrambled eggs, sausage, and shredded cheese.
  4. Add 2–3 tablespoons of filling to each tortilla and roll tightly. Place seam-side down on a lined baking sheet.
  5. Spray tops with cooking spray. Bake at 425°F (220°C) for 15–20 minutes until crispy. To freeze, freeze on the sheet 1 hour, then transfer to a bag.
  6. Pair with salsa, sour cream, or hot sauce and enjoy warm.
