Ingredients

  • 4 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or blend)
  • 1 tablespoon butter or oil
  • Salt and pepper, to taste
  • Diced ham or cooked bacon
  • Sautéed onions or bell peppers
  • Spinach or kale
  • Hot sauce or salsa

Instructions

  1. Crack the eggs into a bowl, season with salt and pepper, and whisk lightly.
  2. Heat half the butter in a skillet over medium heat. Scramble the eggs until just set. Remove and set aside.
  3. Lay out two tortillas. Add cheese, scrambled eggs, and more cheese on one half of each. Fold over.
