  • 1.5 pounds beef chuck, cut into 1-inch cubes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 medium potatoes, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14 ounces) diced tomatoes (with juices)
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef cubes on all sides. Remove beef and set aside.
  2. In the same pot, sauté chopped onion and minced garlic until onion is translucent, about 3-4 minutes. Add diced carrots and celery, cook for another 5 minutes.
  3. Return browned beef to the pot. Stir in diced potatoes and green beans. Pour in diced tomatoes and beef broth. Add dried thyme, dried rosemary, bay leaf, salt, and pepper.
  4. Bring the soup to a simmer over medium heat. Reduce heat to low, cover, and braise for 1.5 to 2 hours, or until beef is tender.
  5. Taste and adjust seasoning with salt and pepper as needed. Remove bay leaf. Ladle soup into bowls and garnish with fresh parsley if desired.

  • Fresh herbs like parsley or basil can enhance flavor; add them at the end.
