- 1 lb boneless, skinless chicken breast (cubed)
- 2 cups orzo
- 2 1/4 cups chicken broth (low-sodium recommended)
- 1 cup cherry tomatoes (halved)
- 1 cup baby spinach (fresh)
- 5 oz Boursin cheese
- 1/4 cup Parmesan cheese (shredded)
- 2 cups sweet potatoes (cubed)
- 4 garlic cloves (whole)
- 2 tbsp olive oil
- 1 tsp Italian herbs (dried)
Instructions
- Preheat the oven to 425°F and grease a 9×13 or 10×15 baking dish.
- Cube sweet potatoes into ½-inch pieces and chicken into 1-inch chunks.
- Pat the chicken dry and season with salt, pepper, and Italian herbs.
- Toss sweet potatoes and garlic cloves with olive oil, salt, and pepper in the baking dish. Roast for 20 minutes.
- After 20 minutes, stir in the Boursin cheese and seasoned chicken. Drizzle with remaining olive oil and roast for another 15 minutes.
- Remove from oven and squeeze roasted garlic from skins into the dish, mashing into a paste.
- Stir in cooked orzo, fresh spinach, and half of the reserved pasta water until combined.
- Top with shredded Parmesan cheese and broil for 2-3 minutes until golden and bubbly.
- Let rest for 5-7 minutes before serving.
