Description

Creamy Boursin Orzo Bake with Chicken and Veggies is a comforting casserole that combines orzo, chicken, and roasted potatoes in a creamy sauce.


Ingredients

  • 1 lb boneless, skinless chicken breast (cubed)
  • 2 cups orzo
  • 2 1/4 cups chicken broth (low-sodium recommended)
  • 1 cup cherry tomatoes (halved)
  • 1 cup baby spinach (fresh)
  • 5 oz Boursin cheese
  • 1/4 cup Parmesan cheese (shredded)
  • 2 cups sweet potatoes (cubed)
  • 4 garlic cloves (whole)
  • 2 tbsp olive oil
  • 1 tsp Italian herbs (dried)

Instructions

  1. Preheat the oven to 425°F and grease a 9×13 or 10×15 baking dish.
  2. Cube sweet potatoes into ½-inch pieces and chicken into 1-inch chunks.
  3. Pat the chicken dry and season with salt, pepper, and Italian herbs.
  4. Toss sweet potatoes and garlic cloves with olive oil, salt, and pepper in the baking dish. Roast for 20 minutes.
  5. After 20 minutes, stir in the Boursin cheese and seasoned chicken. Drizzle with remaining olive oil and roast for another 15 minutes.
  6. Remove from oven and squeeze roasted garlic from skins into the dish, mashing into a paste.
  7. Stir in cooked orzo, fresh spinach, and half of the reserved pasta water until combined.
  8. Top with shredded Parmesan cheese and broil for 2-3 minutes until golden and bubbly.
  9. Let rest for 5-7 minutes before serving.
